Sunday Shout-out: Chef Chuck’s Cucina


Chef Chuck

When I started this blog, Chef Chuck from Chef Chuck’s Cucina was one of the first readers to find Ciao Amalfi and introduce himself. With family heritage going back to one of the most prominent and influential families in Amalfi, Scala and Ravello during the Middle Ages, Chuck visits the Amalfi Coast just as often as he can. What an amazing experience to be able to visit the churches in this area and see your family crest! I look forward to meeting Chef Chuck one day when he returns to explore his family heritage along the Amalfi Coast.

In the meantime, I enjoy his blog Chef Chuck’s Cucina where his motto is: “Bringing families and friends together around the dinner table to share old and new Italian recipes.” His tantalizing recipes often send me scampering to the kitchen or to the market fresh with lunch or dinner plans. Since the weather is hot hot hot here on the Amalfi Coast, I have fresh summer salads on my mind. Here are a few of my favorite Chef Chuck salads that I know I will make again and again this summer:

    Ciao Laura, I think you and Lola have a great future plan for us, and anybody else that cares to join! This would be a day to remember, for when blogger’s come together:) I also have a loving future family member with close ties to someone who owns a beautiful house in Praino, with a huge kitchen !! I am sure this would be a glorious memorable time. Just for us to have this opportunity to cook and eat together is imaginable!! I will let you all know ahead of time, so that this notion could become a reality, one bright day! Grazie to all!!

    Hi Laura…oh yes Chef Chuck has been over to my blog too..I do follow him..but I cannot leave comment with that style comment box….it just won’t let me sign in, no matter which I choose!!! There are a few people who have that…it is frustrating, not sure why it happens.

Mmmhmm autumn is definitely my favorite season. 🧡 This morning I woke up a bit earlier than my alarm and looked outside somewhat perplexed. The entire sky, the town—everything—had a burnt orange hue. A hurried lacing up of the shoes and still bleary eyed, but I just had to see it better for myself. It was a glorious sunrise. Now the rain has just gently started falling and I’m in full autumn ecstasy.

Later I’ll return to the piano to pick up where I left off yesterday learning this beautiful autumn waltz by @andreavanzo_composer. 🍂

This morning was a little cloudy when I went out f This morning was a little cloudy when I went out for my morning walk like I do most mornings in Amalfi. Down the coast, across the Gulf of Salerno, rays of light were shining right on the city of Salerno. I had set out with Salerno on my mind because it was there that 82 years ago today—on September 9, 1943—the Landing of Salerno began during WWII. My Grandpa was in the Army during the war - a lot of it in Italy. Yet he would never speak of where he was or what he did, and certainly had no desire to ever see Italy again after the war. While he probably wasn’t in that first landing in Salerno, he would have been somewhere in Italy, perhaps further south in Calabria or in Sicily. I always think of him during these days and wonder about those hard experiences he must have had in Italy. And very grateful for what he and so many fought for and endured. 

If you ever visit Salerno, south of the city there’s an Allied War Cemetery that is a moving and important place to visit. 🤍
Have I ever shared one of my favorite poems about Have I ever shared one of my favorite poems about Amalfi? It’s by the American poet Sara Teasdale (1884-1933). It’s simple and it’s heartbreaking - like first loves so often are. But I think about it often, especially on night walks in Amalfi.
